The Man Behind the Nachos!

We would like to introduce you to someone very special to us: our new Head Chef, Evan Simpson!

Evan has had quite the culinary journey! After working at Brazilian Steakhouses in Toronto for several years, he moved to Brazil to open a popular series of food trucks with a local chef. After 4 years in the south, Evan returned home to Canada in 2017, though he still owns Mr Gula Food Truck.

Evan was scheduled to start as Level One’s Head Chef in March – which for obvious reasons didn’t happen. Instead, he whiled away his time in lock down dreaming up ways to make our menus pop. Besides his entirely new additions to our fare (like the Taco Bowl our first floor or the Pickle Pizza our second floor), his favourite tweak is to our chicken tenders. These are now breaded in house using Evan’s own secret recipe! Crispy on the outside, tender on the inside and delicious all the way through, these new tendies are a must-try on your next visit.

What does Evan do when he’s not making magic in the kitchen? Well for one thing, he’s a fan of the game Trapwords, a game that’s a bit like Taboo but with variable challenges and a bit of a role-playing feel.

Trapwords is one of Evan’s favourite party games.

So please join us in making Evan feel welcome. How? Well, you probably won’t see him during your visit since he’ll be in the kitchen, but not attempting to suppress any “yum!” noises while eating his food would be considered a compliment 😋
